Healthy weeknight dinner comes together in a pinch on one-pan with this Whole Roasted Sockeye Salmon Recipe. A sweet and aromatic dry rub and a light touch of citrus provide fantastic flavour. Serve with vegetables, potatoes, or a rice pilaf and you have a great hassle-free dinner on the table in 30 minutes.
Whole Roasted Sockeye Salmon Recipe
Serves 6
Ingredients
1 whole Nanuk Raw Sockeye Fillet
3 tablespoons olive oil
1 lemon, sliced
2 tablespoons brown sugar
1 tablespoon chili powder
1 tablespoon paprika
1 teaspoon ground cumin
Salt and black pepper to taste
Method
- Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper. Remove the sockeye fillet from the packaging and pat dry with paper towels. Make several shallow slits on one side of the fish.
- Place salmon cut side up on the baking sheet. Combine the oil, brown sugar, chili powder, paprika and ground cumin in a bowl. Brush mixture over the fish before seasoning well with salt and pepper.
- Carefully place the lemon slices into the slits on the fillet so they stand up. Bake 20 minutes in the preheated oven, or until fish is easily flaked with a fork.
- Transfer to a large platter for serving and enjoy!
